I desperately wanted artichokes and desperately needed a quick side dish. I dd this. Serve topped with vegan Parmesan.

I like taking recipes and changing them to my own liking. This is one of those -- and probably my favorite new dish in quite a while. This can be served cold with either Cinnamon tortilla chips or lightly salted (or unsalted) regular tortilla chips
I adore Butter Paneer Masala, but sometimes making paneer is more effort than I want to make. This is my quickie version of Butter Tofu Masala. Spices can be adjusted to your tastes. If you don't have access to Greek yogurt, sour cream or heavy cream works too.
This is a slight adaptation of a soup I found in a Better Homes and Gardens book.
I found a recipe in one of my Chinese cookbooks that sounded good but not nearly filling enough. So, of course, I adapted it to make it enough for a few meals. The broth is based on the book's "Chinese Stock": the stock of boiling a chicken and ham.
1 lb of lean chicken or pork could be substituted for the tofu.
I wanted Indian food for several people , , one night but didn't have enough money to afford it, so I whipped this up out of what I had available. I'm a big fan of garlic and onion, so there's a lot of those two in this. If garam masala isn't available, use additional curry powder.
I always wanted to try mole sauce, but I couldn't find a recipe I liked -- so I made my own. Serve it warm with rice.
I wasn't feeling well, and I wanted soup I could actually taste. I had recently developed a love for curry -- and came up with curry soup recipe.
I tried a salad similar to this at a local restaurant and decided it was something I wanted to have more often (for less than $7 each). Baby spinach and pepper replaces arugula.
As the weather heats up, this is a good cool meal for one with very little prep required.
One of the things I miss most about eating meat is Cajun food, so I took a recipe for Shrimp Etoufee and edited it a bit. Good served over brown rice.
