Paelo inspired egg muffins for quick breakfasts.
This is a classic Eastern pottage I got from a Jewish Cookbook, and then fiddled with until it was just right. With the right stock this recipe can also be gluten free, vegan, and/or vegetarian. Wonderfully filling soup that is high in fiber and low in fat! May eat with pita bread, additional veggies, or plain.
Cheaper, healthier, and less preservatives than store bought, and honestly I think they taste better!
For a gluten free option: Use soft tofu and leave out bread crumbs
For a Vegan option: Use soft tofu and leave out eggs.
This is a great stew, easy to make, great to eat, enjoy with friends, just add a small soft pita and hummus and you've got a great balanced meal!
