Vegan Butternut Soup

A simple brothy low calorie soup to get your metabolism amped before any meal

Mexican Potato Soup

Add spicy sausage/chicken or swap taters out for cauliflower to make it your own.

ButternutSquash Soup sans Cream and fat!

My friend is trying to convince me that living the paleo lifestyle is the way to go. While I won't jump on that bandwagon I did want to make a healthier B.Squash soup without the butter and heavy cream or potatoes. This recipe is paleo, body building, atkins, southbeach, and my personal favorite - low calorie for a general healthy lifestyle. Plus, its jam packed with vitamins and veggies and if you leave out the sausage you've got a vegetarian side under 100 calories! Even with the meat we are talking 150 calories a serving.

Oatmeal Banana Pancakes with Pecans and Flax

Makes 12-14 mini pancakes under 90 calories each with 2 grams of fiber and 2 grams of protein per pancake!

Oatmeal Banana Pancakes with Pecans and Flax

Makes 12-14 mini pancakes under 90 calories each with 2 grams of fiber and 2 grams of protein per pancake!

Walnut Scones with Greek Yogurt

189 calories per scone with 6 grams of protein! Can't argue with that. Super quick and easy to make as well.

Creamy Meaty Harvest Stew

Awesome creamy and hearty soup that makes an entire meal in under 300 calories.

Other options: ditch the meat for a creamy and thick veggie meat or better yet, use a really flavorful or spicy sausage/chorizo. You get twice the flavor but can get away with half the meat.

Chinsuko - Okinawan Shortbread

400 year old tradition! Simple and delicious. Not typically "healthy" but small enough to not break your Spark calorie budget. Great to have a single cookie with a scoop of vanilla ice cream for a reasonable dessert treat!

Sweet Potato Shepherds Pie

Traditional Shepherds pie with a sweet potato twist and turkey for a more lean dining experience.

Southwest Pinto Bean Burgers

From CookingLight: Ways to Cook Vegetarian (with a few of my own changes)

Roasted Red Pepper Sandwiches

Jam packed with fresh veggies this spread makes for the tastiest light lunch there is. Serve on some whole wheat bread, toasted english muffin or even and pita sliced like a pizza and you can't go wrong!

Southwestern Cream of Chicken Stew

Super easy, super delicious stew that can easily be cooked on the stove or in the crockpot! Sprinkle with a little cheddar from a meal under 300 calories! ~OR~ pour over some high in fiber brown rice for a tasty and very filling delight!

Flounder a la Parm Casserole

Healthy and Delish. We all need to eat more Fish! Makes an entire meal. No need to add rice or pasta.

Curry Vegetable Stew

I just made this up for dinner the other night because I had some fresh okra that was going to go bad. It was delicous! and for as few calories as it contains its quite filling!

Bean Corn Pico de Gallo Salad

Is delicious served alone or on a bed of lettuce with some grilled chicken for a delicious Southwestern salad.

Beer Bread

An all time favorite! My mom has been making this since I was kid. Straight out of my Wheeler Elementary cookbook! I used Miller Lite for the less calories and mild flavor but you can use any kind. Try several and play with it different beers bring out different flavors.

Japanese Curry Rice

May add 1lb ground beef or pork cutlets

Healthy Yummy Egg McMuffin

Delicious protein kick under 225 calories early in the morning - and just as fast as driving to McD's to pick up the real (super unhealthy) thing! Cut out the slice of deli meat for vegetarian delight and to save about 30-50 calories.

Southwestern Chicken Pasta Salad

Serve hot or cold this yummy dish is perfect for a meal all its own or a tasty side dish. Exclude chicken for a vegetarian delight!

Amber's Garbanzo Chickpea Extravaganza

I actually got the basics of this recipe when I went to a tops meeting with my mother in law! Get em crispy enough and they are soo tasty! Like eating chips or popcorn but without most of the guilt because they are so jam packed with protein and only have under 200 calories a serving. It feeds four as an appetizer but I'm not gonna lie, I've sat down and had em for lunch and ate an entire batch! They even have a good amont of fiber so enjoy!

Creamy Skillet Chicken Alfredo w/ Veggies

A great way to splurge for some cheesy alfredo goodness while still getting something from every food group -- AND loads of veggies! Eat with whole wheat past and voila!!
