This is from Redbook Magazine (June 2009). I substituted fat free feta for the regular feta to save a few calories and some fat grams. I also added artichoke hearts.
The original recipe comes from Redbook Magazine (June 2009). I love lemon, so I tweeked it to fit my restricted diet. The original recipes calls for 2 c sugar (replaced with Splenda) and whole milk ricotta cheese (replaced with park skim ricotta cheese. The original recipe had 119 calories, 3.9 g fat, , 2.3 g saturated fat, .2 g polyunsaturated fat, 1.1 g monounsaturated, 21 g cholesterol, 77.1 mg sodium, 26 g potassium, 19.2 g carbs, .3 g dietary fiber, 13.1 g sugar, and 2.3 g protein.
I make this for summer time cookout when a cool crisp dessert is needed. No one even knows that I've used fat-free infredients!
The perfect wrap for those on the go, with cranberry mustard and Avocados and is especially good on a warm summer day!
