This is a banana version of the popular lowfat, low sugar muffin recipe. These muffins are moist and delicious. They are simple to make and also freeze well. Pop 2 frozen muffins in the microwave for 1 minute and you have a nutritious, portable breakfast.
This recipe is easy enough to make a batch every day when the garden is coming in. It is a bit sweet so it is great on beans and peas!
The popular yummy cake in cupcake form. Not very low in calories, especially when frosting is added, but, oh, so good!
This is my attempt to make a healthier, but still tasty, version of Chicken Divan. The sodium count is still a little higher than I would like, mainly due to the jarred Alfredo Sauce. The count could be lowered by using a homemade Alfredo Sauce but then the calorie count would probably be higher.
A reduced calorie version of the old standard.
You won't miss the meat at all! Most any veggies you have on hand can be used. Great way to use leftover bits.
Easy version using jarred Alfredo Sauce and whole wheat noodles. A real treat served with a side salad.
Super good on a cold day. Garnish with shredded cheese, sliced scallions, and a teaspoon of no fat yogurt for a little flair. (Not calculated in nutritional info.)
These are great with greens and cornbread!
This is a wonderful way to use leftover chicken and veggies. Canned veggies will do if you don't have leftovers. Will warm your tummy!
Soaking the chicken in buttermilk makes it very moist.
Low in fat, good source of fiber. Sodium is a bit high due to the sausage. Good on a cold rainy night. The soup gets better every time you warm it up.
This potato salad is a reduced-calorie version of a Southern Living recipe. It is delicious served warm or room termperature. The blue cheese flavor is stronger when it is served cold.
A lower calorie version of the old classic, though still rich and yummy.
I adapted a Paula Deen recipe to lower the calorie count. NOTE: This is not a low-cal dessert, just a lower calorie dessert.
Tastes great on veggies or meat
Moist cornbread really good with beans and greens!
