Workweek Vanilla Chia breakfast

A delicious tapioca pudding-like breakfast, loaded with protein and omega 3's.

Coconut and nutmeg protein mousse

The xanthan and guar gums help make this into a smooth and creamy creamy protein treat. I used a Vitamix blender. I'm not sure how well a regular blender would break down the ice.

CocoNana Chia Protein Bowl

Crazy good! This makes for some chewy, thick textured hot cereal. Add more almond milk or some water if you like it thinner. Dairy milk would add more protein.

Pan Roasted Brussel Sprouts with Onion

I love to cook up a big batch of these in my cast iron skillet for lunch, but my family hates the smell when I make them.

Stone ground cornbread

First try, not bad, but might try buttermilk instead next time. A little crunchy.

Zucchini Banana Oatmeal cookies

Moist and soft. I usually double the batch because it's very hard to puree 1/2 c. of zucchini in my blender, and I prefer to use a whole egg. Nutrition calculated with craisins and no walnuts.

Peanut Butter Oat cereal (reduced fat)

This one doesn't have quite as much peanut flavor as the original, but is a good compromise when you don't have calories to spare.

Basic Hot Cereal blend

Add in flavors of your choice. Some combos I love: unsweetened apple sauce with cinnamon, nutmeg, and cardamom ir the same spices with pumpkin puree.
frozen blueberries zapped in the microwave and globbed on top with a few sliced almonds
mashed cooked banana and maple flavored syrup

Oatmeal "Brownie Batter"

I dare you not to lick the bowl!

Chia tapioca

A successful and nutritious cravings-buster! Healthy enough for breakfast, IMO, but you'd want to eat both servings.

Kung Pao steak and Veg

Next time, drastically cut or omit rice vinegar, up chili paste, and thicken the sauce with cornstarch. One serving was approx 240 g. Serve with rice and top with chopped peanuts, which are not included in the nutrition analysis.

Cheesy Kale Chips

Delicious. I used a dehydrator, but others report success in a low oven. Beware that these will leave little bits of green all over your teeth. Not too date friendly, but delicious!

Healthier Chocolate ganache

Food of the gods. Try not to eat the whole thing. Would definitely work as a frosting. Sweet potato is much easier to use than carrots. Entire batch was about 615 grams, ea serving 40 g.

Roasted Grape Tomato and Kalamata Olive Rotini

Improvised as a way to clean up some leftovers and it turned out really yummy.
