My grandmother's recipe, this is a staple at all "feast"-style occasions: Christmas, Thanksgiving, Easter, etc. I never really liked it as a kid, but as an adult, I can't get enough. I think it's pretty healthy, too! It's mostly fruit!
This dish is savory and hearty, sticks to your ribs, but is super-easy to make (I promise, you can't mess this one up) and employs mostly veggies. It's made with RED potatoes, BROWN rice, and GREEN beans... hence the name "colorful" stew. It's a great healthy substitute for boxed rice or pasta microwave lunches.
My mom's recipe. The ultimate in stick-to-your-ribs comfort food and healthy dose of protein. Goes great with mashed potatoes (or red potatoes for a healthier meal)!
If you're like me (not a cook) you'll appreciate the ease and great taste. Awesome for lunch!
