Yummy dressing tossed with a cabbage salad. Makes a nice version of cole slaw without the creamy dressing.

A wonderful, flavourful Greek soup!!!
I found this recipe too salty for my taste, so I would cut down on the salt a bit. Also, if you are using OXO of a liquid chick broth, you may not want to add any salt at all.

Not only is this gluten free, but high in protein and fibre.
A friend of mine passed this on to me. It's wonderful!!! The broth can be drained off and the veggies can be dehydrated so you can pack this up and take it camping.
Throw everything in the slow cooker on low for 6 hours. Nice to serve with a grilled cheese sandwhich.
This can also be cooked on the stove in under 30 minutes
Bob's Red Mill GF All Purpose Flour has been used. You can substitute regular flour.
NOTE**** You can substitue 1/2 cup of crushed pineapple instead of the pumpkin for an equally moist brownie. The calorie count will change.

This is the basic recipe for Cake in a Cup when you are short on time and desperately need a chocolate fix. You can make this healthier by using a sugar substitute, using apple sauce instead of oil, and whole wheat flour instead of white.
When the veggies are bountiful, instead of using them all up at once, or freezing large amounts of them, divide them into 1 cup portions and throw them into a large ziplock bag along with some left over chicken or even beef (if using beef, use beef broth).
This is a nice accompaniment to fish or chicken. Since it contains avocado, it also makes it a good MUFA (mono unsaturated fatty acid) addition.
