An excellent weekend brunch, but also makes a great "Breakfast for Dinner". The flavour of the vegetables takes away the need for a lot of seasonings. If you are not counting calories you can add cheddar cheese. You can also add some finely diced extra lean ham. Add a piece of multigrain toast and a glass of orange juice and you have a healthy and filling meal.
The calories for the cheese and/or ham are not included in the calorie count and need to be added if they are added to the omelet.
The nutritional value of this far exceeds the calorie count. Liver is CHEAP but if you check the nutritional information you will understand why Mom made you eat this. It wasn't only the price.
I made it for the main course at my wedding and it was a hit with the guests. Tastes great. Lots of vitamins and protein. Slightly altered from Chatelaine's recipe about twenty years ago.
