Great recipe for when you get a bumper crop of summer squash. You can use yellow or green.
This can be made ahead of time. Great for when company's coming.
I usualy make this on the weekend and serve it over reduced calorie toast or biscuits along with some potatoes. I cook the potatoes with a few slices of turkey bacon and onions. It gives the potatoes a really good flavor.
Calories for the potatoes and toast/biscuits are not included in this recipe.
