A quick and yummy, very low-cal dessert. Select your own mix of frozen berries. If you use a bagged store-bought mix, be sure it's just berries with no added sugar. The berries must be frozen solid for this recipe to work.
This is my variation on a recipe in Kevin Mills' cookbook "Faster! I'm Starving!" It only takes about 20 minutes total to prepare and it's super yummy. The cauliflower is tender, but still firm -- not mushy like it gets when you boil or steam it. If you want to change the spice mix, just be sure you use other warm spices.
Much better tasting than French fries -- and better for you, so win-win.
I cook experimentally. A lot of my experiments end up not worth repeating. This one turned out pretty good though. Enjoy!
Even if you don't like tofu, try this. Marinating adds flavor, and slow baking changes the texture so the tofu is dense and chewy, almost meat-like. The recipe takes a long time to prepare, but most of that is marinating and baking time.
