Parmesan Tilapia

I modified a recipe a got off the FoodNetwork. The recipe said to bake or broil in the oven, I grilled mine. My husband hates all fish, unless it's deep fried. He enjoyed this fish.

Crispy Zucchini & Potato Pancakes

Was looking for a lighter version of Potato Pancakes. This is exactly the way the recipe is written, but with a few modification, to suit yourself, it can be lightened up.

Camp Potatoes

We make these potatoes all the time as a side dish, when cooking on the grill. But I recentily tried this cooked in a cast iron skillet on top of the stove, they were good as well. Use the Veggies your family will enjoy, it's great with a wide variety of Veggies.

Ham & Pasta w/ veggies

I came up with this recipe to help use up ham after a holiday. Can be divided & frozen to be used for a future dinner(s). As there is only my Husband & I at home, I divide this into several meals & freeze the extra for future use.
