A simple, hearty, slightly spicy dish that's a great craving-killer to stop you from running out to the local Indian buffet. Serve with a fresh green vegetable for a complete meal. Chicken may be substituted.
This dish was inspired by the forest- simple, earthy ingredients for an extremely rich, complex flavor that's a lot lower in calories than you'd expect. It's also impressive-looking enough to try on dinner guests. Try it with wild rice or couscous on the side, and spinach.
This is a half eggplant stuffed with a savory mixture of tomatoes, ground turkey, yogurt, and a variety of spices. The yogurt makes the dish seem far more decadent than it is. Be warned- this may be a one-serving recipe, but it is a BIG serving! You'll be very full.
I was an Egg McMuffin addict, and although those aren't too bad for you nutritionally, I needed a way to make something similar at home. If not to save my waistline, then at least to save my pocketbook and get me out of the habit of pulling into drive-throughs.
