The texture to this is like a cross between a cheesecake and the inside of a cheese danish. Delish as a light breakfast- bake enough to where the edges get nice and brown (it creates a crust-like texture). Make sure you cool it properly before you cut it.

Low-Carb Chili with Black Soybeans

Absolutely excellent chili using canned black soybeans and a true 30 minute, 1 pot meal. Have your local supermarket order them for you, or buy online from netrition.com. Beans are very high in carbs and are not permitted on most low-glycemic or low-carb diets and the addition of black soybeans gives this a most authentic taste and feel. Serve with shredded cheddar cheese and sour cream.

Broiled Chili-Garlic Tofu

Spicy! Cut back on the chili paste if heat isn't your thing. Make sure to drain the tofu as much as possible and place under broiler for the last minutes of cooking to get a nice crust.
