Want lower calories? Substitute Ground turkey for the ground beef, if you prefer, and/or sub any variety of reduced-fat cheese for the Mexican blend.

"Healthified" Beef Enchilada Pie
This casserole size holds the layered enchiladas together better than a larger casserole.
Recipe found on EatBetterAmerica.com - with one change - I used white corn tortillas instead of flour tortillas.

My recipe uses ground elk Italian sausage - if you sub with another sausage, the fat/calories *might* be quite a bit more, though it'd be great with leftover ground beef, ground turkey or chicken, as well.
Super easy Thai dinner, (use this for chicken, pork or seafood) [*We didn't find these spicy at all so I added red pepper flakes to the table so people could add as much "heat" as they wanted]

The ONLY way my daughter will eat rice... Delicious and creamy texture, great with everything from BBQ'd beef to spicy peanut pork or chicken. Great served with pineapple as well.
Awesomeness found on the back of can - Hands down BEST spinach dip I've had. I actually add a bit more of the spinach than the recipe calls for since it IS spinach dip!
