Full of protein and fiber this salad is filling and satisfying. I made it on the fly with what I had available, using leftover dressing I made the day before. You can sub. with your favorite homemade dressing.
This is a basic recipe that can be easily altered to fit your taste.
I put this over Hungry Girl tofu noodles. You can put it on any type of pasta or used in place of pizza sauce on a flat bread pizza (add some roasted veggies and cheese- yum). Great alternative to basil pesto. It's also possible to substitute spinach in for the kale.
This recipe uses tofu that has been frozen then thawed and drained. Make sure to squeeze out as much water as possible to make room for the amazing flavors to soak in.
Very easy to make and full of flavor. Add a salad and becomes a healthy dinner.
