This is a recipe I got from Rachael Ray's 30 Minute Meals Comfort Food. It says to serve it over buttermilk biscuits or rice pilaf. I'm going to try toasted whole grain bread or some kind of brown rice.

This is a base recipe to get the nutrition info. for a lightened up version of Pasta Fagioli soup. I leave out the meat and also the pasta (I am trying to steer clear of processed carbs). I haven't added any seasoning because I do it differently each time I make it and I mostly wanted the nutrition info. Feel free to use it as a start to your next soup. Once I have the base recipe I find it so much easier to track, even if I decide to add meat, pasta, or anything else to the soup!

I love, love, love to cook. Even more than I love to eat (if you can believe it!) and it was such a relief to find that while setting out on this healthy journey I could still cook and enjoy delicious food. I hope you enjoy these recipes as much as I do.
