Emeril uses smoked salmon which I love but, it has a high sodium content so I used salmon that I had poached. I also reduced the amount of salt when calculating this recipe and added capers. I also used .5 tablespoons of Honey instead of sugar when calculating this recipe.
Place the salad greens into a salad bowl, and sprinkle with dried cranberries, walnuts, mandarin orange sections, gorgonzola cheese, and avocado chunks. Drizzle the salad with the dressing, toss, and serve.
