I make this from leftover pot roast when I don't have any leftover carrots and potatoes.
I used leftover friend chicken, removing skin & bones. To reduce calories, fat & cholesterol, use baked or broiled chicken.
Substitute Portabella Mushrooms for potatoes in this salad.
Made using juice and pork left over from rib dinner. I start with 2 packs of country style pork ribs, making BBQ ribs one night and making soup for next night.
Beef chili with just a bite of spicy.
Yummy - next time I may try using splenda instead of sugar to cut back on the suger and calories!

Calories are right and dish is filling, but the dish is high in sodium due to the fact that the ingredients are from mostly prepared foods. Substitution to reduce sodium is that you could make your own fried rice for this stir fry without any spices.
