I found this recipe in the New York Times archive. It is
adapted from Ficre Ghebreyesus, executive chef at Caffe Adulis in New Haven, which is now closed. This was one of my favorite restaurants and dishes as an undergrad and I'm so glad I was able to find the recipe. It's phenomenal!
No added salt. Take out the seafood and add seitan, kidney beans, or chickpeas to make it vegan!
Protein pancakes great for anyone on a low cal, low carb, high protein diet. And yummy! Serve with a fruit compote.
