This is a recipe for a crepe. These can also be used as a faux tortilla for fish or shrimp tacos.
A simple fresh salsa with a little kick.
This sauce recipe was based on a Jo Mama's World Famous Spaghetti sauce recipe that I modified for taste. When I make this sauce, it quickly disappears in my house. Everyone seems to loves this sauce.
This is recipe for a thin style, cracker pizza crust similar to Imos Pizza.
This is a lasagna made with Eggplant, instead of traditional pasta noodles. This is really a great tasting dish. This has been confirmed by the kids who will eat it, without knowing they are eating eggplant. I was once told that if the kids eat it, it must be pretty good. I hope you try it.
Shepherd's Pie is essentially a casserole, lined with cooked meat and vegetables, topped with mashed potatoes, and baked.
A slightly modified, but rather Authentic Indian recipe. My wife and I love Indian food, especially vindaloos. Now that we are dieting, I have scaled down our favorite "red" Vindaloo recipe. This Vindaloo has a nice combination between the tomato sauce and the mustard, with just enough heat.
I enjoy Baked Ziti. However, since dieting I have been able to eat it. So, I decided on Father's Day to revise my recipe to make this fit into my daily meal plan without consuming to many calories. My wife has less calories than I have so I made it work for the both of us.
A meatball recipe to go with my spaghetti sauce recipe.
This recipe is for chicken chimichangos baked in the oven. It is an easy dish to make and gets high ratings in my house. Compliment this dish with some mexican rice for a nice dinner under 400 calories.
A cleaned up, South of the Border Mexican Recipe. I have been told by friends that came over to eat before I started dieting that these were the best marinated fajitas they ever had. I have slightly revised the recipe removing some oils and reducing the calories.
