This is a recipe from the Spark Solution tweaked for a slow cooker.
Cookies for breakfast? Yes! Especially when they're packed with heart-healthy fats and plenty of fiber and protein with no added sugar. Not only are they a great on-the-go breakfast, but they're also a mighty find snack.
I got this recipe from epicurious.com. It first appeared in Bon Appetit in November of 1999. I've tweaked it to my wimpy tastes, but you can spice it up with chili powder and cumin, as the original recipe calls for.
This was a twist on the Zucchini-Potato pancake recipe listed here. I didn't have zucchini, so I used yellow [summer] squash and used up some black beans I had in the fridge to beef up the recipe.
