TOH 2011 recipe - very good! Like a coffee cake. I make it in 2 round cake pans vs. the 9X13. One of our favorite rhubarb recipes - very moist, great flavor.
This goes together very quickly for a quick breakfast option or snack. Kid-friendly, a bonus.
Good way to put your rhubarb to use! Low calorie, fast and easy to prepare, good for those summer pot lucks or bbq get-togethers. Kids love it; they might not guess what is in it:D

Can easily cut recipe in half, and use one variety of bean. We love this recipe so much, it doesn't last long. Very versitile for uses...as a dip, spread, on salad...use your imagination!!
