Easy to fix; keeps for weeks in fridge. I eat it by itself OR with greens and other salad fixings. Could probably add cheese if desired.
Servings and calories are approximate. I need to measure exactly.
Lower Calorie Baked Oatmeal
1 cup sugar
1 cup Splenda
1 cup Smart Balance butter
2 T baking powder
1 t salt
2 cups skim milk
6 cups oats
2 T chopped nuts (optional - adds ___ calories)
2 T brown sugar
1 t cinnamon
Turn batter in to ungreased 9x13 inch cake pan.
Sprinkle with brown sugar and cinnamon.
Bake 20 minutes at 350. Serve warm with milk.
I call this "Breakfast Cake" - it's like a loose oatmeal cake, that you eat warm, with milk, like cereal.
Easy but maybe not healthy?
