Yummy healthy snack - freezable for batch cooking. Great source of Vitamin A, Manganese, Phosphorus, Folate and Thiamin, and good source of protein.
Yummy healthiER brownies. Almond flour gives a nutrirional boost and isn't noticed by my kids who don't like nuts. I like to cut them into serving size pieces and freeze them - they don't get too hard and are good to eat frozen.
My potatoes looked icky so I used a bag of mashed potato flakes - yummy.
I first had this dish at a local "Spirit Festival" and it was prepared to accomodate vegans. (I was not vegan at the time) It is slighly sweet and filling.

| Lunches / Bentos Getting all the stuff to make cute Bentos for kids' lunches during the last week of school is bad timing. But it gives me all summer to collect recipe ideas. The cook book gives me a way not to forget them before fall. |
