I got this recipe (the filling) from a great cookbook by Julie Badger Jensen. The first time I made it, I didn't tell anyone it was zucchini; they all thought it was apple, and kept commenting on how delicious it was! A bit high in calories, but so VERY tasty! I've adjusted the original recipe a bit by using Splenda (or other substitute sweeteners) instead of sugar, but sugar can be used (equal measurement) for the same delicious results! (About 100 calories more per serving)

A variation on a recipe I found in Spark.
I found this in Spark Recipes, but the nutritional info from the other recipe was off.
Recipe modified from the "Ultimate Southern Living" cook book.
I found this recipe on Spark ("Slow Cooker Beef Stew"), but the nutritional info seemed off, so I reviewed the recipe and found that it had only used 3 oz of stewing beef in the calculations instead of the 2 lbs called for in the recipe, and only 1 carrot instead of 3 (not a huge difference there, but it helps with your fiber.). So, instead of only 4 g of protein, you're actually getting over 37 (unfortunately, the calories are a bit higher, too!) Hopefully, nobody will be offended by me entering this here! Ingredient list and instructions are copied from user Mrs. Relence; she deserves full credit for this awesome recipe!
