My interpretation of a recipe from Dean Ornish's 'Eat More, Weigh Less'.. This helps satisfy my Mexican food cravings without breaking the nutritional bank!
I often skip the seperate spices in favor of using 1 1/2 to 2 T. good fresh curry powder. Then just add the garam masala, paprika, amchoor. If you don't have amchoor around, tamarind juice or more lemon juice will do just fine.
