Healthy instant chocolate pudding
A light sweet dressing, perfect on any salad that includes fruit.
This is a modification of a recipe on the Al Fresco website. I omit the oil, the wine, and the cilantro from the original recipe, and I use more fruit.
I apologize but I'm not sure about the salsa. I use the whole jar, and I don't know how many servings were in the jar. I put down 20 servings, but it may have been less...which would change the calories and the sodium.
These are baked in muffin tins for portion control. Instead of a traditional crust, the crust is made from crushed cereal (whatever you have on hand).

Quick and easy stew. You can make it vegan by substituting vegetable broth instead of chicken broth. Use low-sodium broth to reduce the sodium per serving. This recipe was calculated using NO SALT canned black-eyed peas and NO SALT canned diced tomatoes. If you use the salted varieties, the sodium per serving will increase. Serving size is about 2 cups.
This is a sweet vegetable soup. It can be made vegan by substituting vegetable stock for the beef stock.
