I love making shepard's pie, but going on the south beach diet meant I had to re-tool the recipe a bit. Here is my creation!
Designed to make lots of leftovers.
A nice, quick, sugarless take on cucumber salad.
I love making Shepard's Pie for large crowds. The turkey makes it healthy, and the bacon bits add flavor without the fat. Toppings are always variable, and you can just add whatever's in your fridge or freezer!
Since our local Uno's closed down, I could not have my favorite dish from them any more. So, through some trial and error, I've created a dish that I love just as much as their Baked Stuffed, but is nearly half of the listed calorie content!
Serve over rice or noodles. I prefer egg noodles.
This meal is a dieter's nightmare. I only make this when requested. Still delicious, so I'll share how to make this. Because I make it as an entertainment dish, the measurements are large, but can be pared down for a simple family meal. You may substitute Light versions of the dairy products to make it a bit healthier without sacrificing taste- I've not tried Far Free versions.

My Slow Cooker Chicken Chili, sans beans or corn. Hubby uses this base for his burritos.

This is a quick and easy way to cook an egg. The only downside is that it takes time to cook.
Good for breakfast or lunch if you don't have time in the morning.
A Rice Cooker is necessary for this recipe.
