I wanted something healthy for lunch and had fresh zucchini and squash to use. This is what I came up with. It could also be split in to 2 servings and eaten as a side dish, too.
I don't use a lot of herbs or spices, but this could definitely be seasoned a million different ways.
I had an idea, and I threw the ingredients together. When I made this, the chicken came out a little dry. Covering it with aluminum foil may correct this. I do not add salt to my recipes so that it can be added to taste when served.
I found this recipe on allrecipes.com and tweaked it just a little.
My mom emailed this recipe to me from "Campbell's Kitchen" and I thought I'd try it.
I adapted this recipe from Bill Phillip's "Eating for Life" and it is excellent!
I needed to use up leftover mashed potatoes and I decided to make a very simplistic potato pancake. This can be modified in so many ways!

This is my husband's recipe and is loaded with flavor! Warning: If you're a wimp like me, this has a definite KICK! It's also a very economical meal. We used dried beans and ground chuck and it was still healthy!
It's great with shredded cheese and sour cream on top!

I always thought this potato salad was too simple...until a family cookout when my family couldn't stop raving about it! It's very simple and easy! I use red potatoes because they're small, so I don't have to peel them or spend too much time cutting them!
This is a very simple marinara sauce with chicken added. It can be added to in anyway you want! I made this one night with what I found in my cupboards!
This is a quick, extremely simple smoothie that I make all the time! I swap out the fruits depending on what I have in the freezer!
