A simple, but flavorful side dish. It's a delightful companion to grilled lamb or chicken. Can be served at room temperature, but is better when chilled for 30 minutes or more..
Our family gatherings were never complete without a Waldorf Salad loaded with apples, nuts and a sweetened mayonnaise dressing. This is my "healthy makeover" version. It looks nothing like Grandmother's version, but it captures the flavors in a delightfully lighter combination.
Adapted from a recipe published by Whole Foods. I reduced the amount of olive oil used and reduced the serving size of the salmon fillets from 4 ounces each to 3 ounces each to meet nutritional guidelines)
I serve this with mashed sweet potato and a salad of chopped romaine tossed with fresh pineapple chunks, chopped cilantro and fat-free balsamic dressing.
A yummy dessert that packs a lot of nutrition. A double serving (about 1/2 cup) also makes a delightful breakfast.
I wanted to make Miso Soup, but my grocery didn't carry Miso so I made the soup without it. My hubby told me with no miso it had to be called "no-so" soup instead. It still makes a yummy lunch.
A nice, fruity dessert when you need a sweet treat. A 1/2 cup serving also makes a delightful breakfast - oatmeal and blueberries with a sweet crunchy topping.
This version takes it's flavor from the fruit and spices and does not contain nuts. A much smaller quantity of dark brown sugar replace the cups of refined white sugar in traditional recipes, making this version lighter, fruitier and lower in calories. I put a pint or so in the fridge to serve with a holiday meal and process the remaining relish in half-pint canning jars, using the water bath method. Total yield is about 6 half-pints or about 48 individual servings.
A simple, but delightful side dish. Works very well with roasted beef, pork, or chicken.
An elegant entree that looks, smells and tastes far more decadent than it really is.
Light, but creamy, this salad makes a good accompaniment to grilled seafood, poultry or meat.
The robust flavor of the mushrooms and onions turns "just rice" into "Wow! Rice!"
Quick, spicy and filling! You can turn down the heat on this dish by rinsing the seeds out of the chipotles before chopping them.
This aromatic and flavorful dish is surprisingly low in calories and fat content. It can be served as an appetizer or when paired with a nice salad, it makes a nice entree. At roughly 115 calories per serving, you can even have guilt-free seconds!
At 553 calories per large serving, this festive salad makes a very satisfying meal at less than half the calories of a restaurant version. You can further cut the calories and fat content by using ground turkey instead of the ground beef and/or serving smaller portions.
Unlike many of the French Onion Soup recipes on SparkRecipes. com, the nutrition values listed for this one include the bread and cheese toppings. Lower in fat and sodium than any pre-packaged version of this all-time favorite, this French Onion Soup wll rival any you get in a restaurant when it comes to taste. The key to a successful soup is to cook the onons slowly, consistenly reducing the cooking temperature.
A new twist on traditional tuna salad. You will never miss the mayo in this vitamin and potassium-rich version of your old favorite.
The perfect way to make mashed potatoes for a family gathering. Can be partially prepared aheaad of time and finished the day of the gathering. Holds well for extended periods of time if you stir periodically to avoid drying around the edges. As a bonus, this version is lower in calories and fats than the traditional version.
It just isn't Thanksgiving without dressing. This lower-fat, lower-calorie version of a classic really fills the bill without blowing your calorie budget.
Savory herbs and onion season new potatoes and pork chops in a low-fat mushroom and wine sauce
A slow cooker recipe that combines pork chops, onions, new potatoes and low fat mushroom soup with fresh herbs. Add a salad or steamed green vegetables to complete a healthy dinner
My family says "Sweet Margarita!" when this summer refresher appears on the dinner table. The comment is a reference to the subtle honey-lime dressing on this mixed fruit salad.
Can be served as a side dish or a dessert.
An easy fish entree that pops with flavor and takes only 12 minutes to prepare and cook on an electric countertop grill.
Makes enough for a crowd. Substitute turkey bacon to lower the calories and fat content.
