Great low-calorie muffins for a light snack!
This is our low-calorie version of a high calorie favorite. We love apple salad and were trying to figure a way to incorporate more fruits and fiber in our diets. Also, neither of us like regular salads with lettuce and all that stuff. We eat it for a snack, a dessert, or as a side with our meals.
