Full of flavor and so satisfying for something that has the same calories as a lean cuisine! Inspiration from a meal I had at Bahama Breeze that totally won me over! I eat this at least twice a week.
Need kids to eat veggies? Make these! They are so naturally sweet and my kids would request them every week. They are also elegant enough to serve at an adult dinner party as a side dish.
I was featured in "Taste of Home" this past summer with this recipe! There was a restaurant that I went to alot with my friends and I ALWAYS had the grilled veggie sandwich with goat cheese. After 10 years of going there every month, they closed down this past fall so I had to start making my own. It is a weekly meal during the summer at my home. Serve it with my spicy sweet potato fries and you have a great healthy meal.
Do you like Bang Bang Shrimp at Bonefish? Well, you will love my Bang Bang Fish where I have altered the recipe slightly to be a lot more healthy! My family LOVES this and encouraged me to post it. My girlfriends request that I make this everytime we get together for girls night. I hope you like it too.
Found this one years ago in a healthy magazine. 10 years later it is still one of our favorites and my college son now cooks it for him and his buddies. We take the leftovers and use it in a tortilla the next day for lunch with sour cream and cheese.

Better than anything that you buy in the store and not just for chips anymore! I have to make this every week for my family. We use it on baked potatoes, eggs, sandwiches, veggies, and mixed into rice.
We LOVE french fries but I have replaced them with this wonderful sweet and spicy version that my whole family loves
