Stroganoff Burgers with Zucchini

This is an adapted recipe from Rachel Ray. I didn't have two pounds of ground beef, but I had a lot of zucchini. Borrowing the idea from the American Heart Association's meat loaf made with zucchini and ground beef, I came up with this.

Better than most steakhouse recipes. The dry white wine is a must. If you don't have a chardonnay, a pinot grigio works very well. I like to do mine in a cast iron pan.

Fast and fabulous chicken salad

Bored with chicken breasts on the grill this summer, I set them aside after dinner one night and threw in some fruit and nuts the next day to make something different. Nummy!

McKenzie Salmon Cakes

These are huge salmon cakes. You could easily get another set of cakes out of this recipe and have it yield a dozen cakes. This recipe is based on the use of leftover grilled salmon, that's why it's such a large recipe.

Singing salad

Not your average salad and nothing like the dreaded Iceberg Lettuce (house) salad that passes for nutrition in most American Restaurants. Kick up dinner with some pepperoni, ham and black olives in this dark green salad that sings with flavor.
Also good with some spinach mixed in. Mix and match your veggies, but variety of crunchy crispy ingredients like pepper, cucumber, carrots and celery are key to the lively texture.

Tasty, healthy, teen-tested pancakes

Using whole wheat flour, splenda and a margarine spread with no trans fats, this recipe yields delicious pancakes. Even visiting teen age boys eat them up. The darker batter raises a few questions, but doesn't stop anyone from eating them. You can cut the salt if you want to lower the sodium count.

Turkey and broccoli in pastry

This recipe is as easy as the turkey broccoli casserole I used to make but has the added texture of pastry found in the crescent wreath turkey recipe. When there's no one to impress, using the pie crusts is not only easier but less expensive. It's like making a giant hot pocket, just change up the ingredients depending on what you've got left in the fridge and pantry

SAUTEED LEMON PEPPER CHICKEN

From cooks.com adapted with olive oil and country crock instead of butter. Could use less of each or just one. I cook in cast iron and tend to need a little more. Juice of one lemon for less tangy flavor, two as written here.

alfredo primavera

From the Bertolli recipes online. with 4 ounces whole wheat spaghetti added into calories calculations, not 8 as suggested online. Four ounces was plenty for four servings. We served it with Italian Sausages, but you could easily use chicken breasts instead.
Now that I've entered it and seen the 24 grams of fat per serving, I'm betting that half of that jar of alfredo sauce would have been plenty.

Sangria - low calorie

This is a good drink for a girl's night. This is a simple recipe. You can also swtich fruits here and if you want add a miniature bottle of citrus vodka or some brandy!
