Recipes I've Shared:
This recipe was created for a diabetic friend of the family, but also includes a way to make it lactose free, for my husband. You cannot even tell it doesn't use real buttermilk. I also substitute egg beaters for the real eggs, but for this recipe, I entered real eggs in the nutritional info.
Usually this is in a braided shape, and looks so fancy! I made it into a heart for Valentine's Day. : )
This is a recipe from my MIL. This is SO light tasting and delicious! We loved it! It tastes like you're eating a full fat cream cheese cake, but with only 208 calories per serving....you'd never know.
This is MY version of a recipe off of the Hungry Girl website.
This would be fewer calories with the light yogurt, but this is my favorite, and I have it as a treat.
These are really good. They are low enough in calories too that you can serve with some homemade quacamole and some black beans on the side.
This is SO simple, yet tastes so good. Unlike cheese sauces that are higher in calories and fat, just sprinkling a bit of shredded cheese on top gives a great flavor while keeping it healthy.
These green beans are SO easy, but the fact that they simmer in beef bouillon gives them the best flavor. We never have any left over. Both my boys love them....my 12 year old will eat 2nds and 3rds.
Ok, I'll admit, this dish looks kinda gross when cooked, but it is DELICIOUS!!!! :) I recently fixed it for a bunch of my hubby's (non-vegetable, picky) male friends, and they all loved it. One of them even wanted the recipe for his wife!
I play around with the spices each time I make this, so just adjust according to your tastes.
These turn out SO good. My family can't get enough! (If you use wooden skewers, be sure to soak them in water for about 10 minutes before grilling.)
This is such a versatile stuffing. I use it to stuff bell peppers, zucchini, mushrooms and tomatoes. It's really good!
OK, these may sound crazy. But for a corn muffin, they're pretty good. They definately have a "healthy" taste to them. I liked them more than my family, but then, they aren't eating to lose weight either!
This quiche is easy and so good! My 12 yr old LOVES it.
It is MY version of a recipe from a cookbook called Vegetables for Vitality.
This is my version of a recipe from a cookbook called Vegetables for Vitality. This is so good, and a great way to get some veggies in.
Made with Pillsbury Moist Supreme Reduced Sugar Devil's Food Cake Mix----Substitued applesauce for oil, and egg beaters for eggs. Used Regular Pillsbury Whipped Supreme Cream Cheese Icing
This is delicious! We all loved it, including my 12 yr old and 3 yr old sons!
This is MY version of a recipe out of Better Homes and Gardens.
I serve these corn pancakes with sliced ham,
purple hull peas and turnip greens. "Down home" cookin!
This is basically pancake mix in a muffin tin, with a bite of a sausage link cooked inside. We REALLY liked these. ( I saw the commercial for that Pancake Puff pan, and got the idea from that. Why spend $20 when you can throw it into a muffin tin!)
This mix is the perfect blend of carbs and protein. With the dried fruit, nuts, Cherrio's and pretzels, it's perfect for after a good workout.
(The nutritional info includes the bun.)
These are full of flavor and very moist. The zucchini helps with the moisture, yet isn't noticeable in taste. The best turkey burger I've ever had.
This recipe is REALLY good, and nice and light. The angel food cake is so moist and soaks up the flavor of the pudding and fruit. Really tasty. (This recipe is from my Mother-in-law)
This is really good, and the kids love it! (It's the only way I can get my 3 yr old to eat eggs!)
I don't even like mushrooms, but these are delicious! They make a great appetizer or side for a salad.
These taste great. From The Sneaky Chef, printed with permission. (www.sneakychef.com)
These are delicious....and SO filling. Basically, a breakfast burrito. My husband (and son) agreed this is their favorite breakfast item

This recipe is from The Sneaky Chef, printed with permission. (www.sneakychef.com) These taste good, and really feel me up!!!
These are delicious.....and no one knows they have spinach in them!!! From The Sneaky Chef, printed with permission. (www.sneakychef.com)
These taste great, are very long when cooked, and are very satifying. I doubled this recipe for company, but you can easily make using just one can of dough.
Very filling and tastes great. I grill my own chicken tenderloins with a little Lime Pepper Seasoning. I love this. With the dressing it's a little high in cal. & fat, but I splurge and have a great salad as a meal, and just watch my snacking during the day.
Delicious and healthy...tastes like french toast. There wasn't a breakfast category, so I labeled under Veggie, since it's got sweet potato and carrot in it. Truly, very tasty. My kids didn't detect the veggies or the wheat flour!
This is NOT a low calorie food. This is a special occasion, once in a blue moon, treat that I will endulge in for a birthday, or in this case, Valentine's.
