You can also add in chopped apples or fresh cranberries (the cranberry option is delicious) but remember - it will add to the numbers.
I used a Pampered Chef medium scoop for the cookies but they weren't packed. It made a nice sized cookie. I rounded to 72 - I think there were actually more than that but they were getting eaten before I could start counting.
Next time I may try to substitute applesauce for the butter - that will cut down on some of the cals/fat too.
I made these for my son's 2nd grade class - they are very easy, pretty nutritious and taste yummy!
