A couple of hints about this recipe:
This can easily be made with red, new potatoes. Not really recommended with bakers – they’re too big for this. The potatoes will fan open in the oven and look hedgehog-like – hence the name.
If you like some kick, add the crushed red pepper; if not, fine without it.
I usually put garlic in every third slice of the potato – put less if you’d like them less garlicky. Or, put none at all. Again, it’ll be fine without.
