This is my lean version of Spanish Rice the way my Mom made it. She made it with ground beef and white rice and made her own enchilada sauce. I kicked it up with the cayenne because it is a good appetite suppressant and we like spicy foods.
You can use 1/2 of cooked boneless skinless chicken breast instead or replace with 2 - 3 oz of shrimp.

As I collect these recipes I ask myself 1. Does it look interesting, tasty, simple. 2. Do I like all the ingredients or will I if I make a few substitutions? 3. Is it likely to appeal to my family? I have not tried all of them yet but I am collecting them for future references.
