This is an easy way to get your veggies in without the prep work or sodium. You can throw this together in the crockpot on a Sunday and have it all week long for lunches or snacks. It also will freeze well.
I dreamed this concoction up for my SparkFriend BrendaBunny because she LOVES the fattening frappes.
Hubby calls these my "Scooby Snacks". I make a batch at a time (12) and HIDE them because the hubby will eat them ALL. I kept forgetting to take my daily teaspoon of coconut oil and decided to dream up a recipe that would make them easy to add to my daily routine. I added in some ground flax seeds that give it a little more texture and of course cocoa because the antioxidants in chocolate is good for you! Since some Sparkers are Vegan, I used a non-dairy creamer. The International Delights Salted Caramel Mocha is really good but you could use any flavor you like. I also used the vanilla nut extract, but you can switch that up too.
I saw the Italian cook (Gena??) on the Today Show while I was at physical therapy (I do not normally get to watch daytime TV). She mentioned that she has oatmeal with a little olive oil. I thought "Hmmm. THAT's different! Savory Oatmeal?" So I tried it. Oh and I added some very sharp cheddar cheese. And I LOVE it! It kinda tastes like a rich mac and cheese, but it is healthy! And FAST, cuz' I cook it in the microwave. Tonight is the third night I had it and I love it for dinner with veggies.
Plain Egg Beaters are tasteless. I like to heat these up to microwave in the morning to get my much needed protein with a little extra flavor. This is becoming a "standard" workday breakfast with a 12 oz. low sodium V-8.
You can make these on Sunday and refrigerate to microwave for breakfast on the go during the work week.
Great way to get your protein and a serving of veggies in right from the start of your day. This sticks with me hours longer than oatmeal!
I need protein in the morning or I'm starving before 10! I like to sleep until the last minute possible, but need breakfast on the go. I was buying those Jimmie Dean Egg White sandwiches, when I thought "I can make these MYSELF, and CHEAPER too!" I cook up a dozen egg whites at a time - the LAZY way--I spray a silicone muffin pan with non-stick spray and place 1 egg white in each muffin cup and bake at 400 until done (about 15 minutes). I let them cool and freeze them in ziplocs. This is a great way to use up your eggs before they get old and saves me time in the morning. By the time I toast my multigrain thin (or you can use a light english muffin) the egg white are heated up in the microwave (about 30 seconds). I slap them on my toasted mutigrain thins with a slice of cheese and head out the door!
This is great for breakfast or even for a summer treat! Whenever strawberries or bananas are on sale - STOCK UP! You can slice them & freeze for smoothies. Next time you have too many bananas going ripe at the same time -slice em and freeze em!
