Lowfat Granola made with applesauce

Perfection in my opinion! The applesauce reduces the need for as much fat. This is the best granola because of the way it's roasted. I really like it with coconut too. The dried organic coconut is so small that even my picky eaters don't know it's there.

Tomato Cream sauce Linguini with grilled sausage and chicken

The cream has been perfectly replaced with light cream cheese. The infusion of white wine and fresh herbs are fabulous!

Healthy Chicken Tortilla soup

This recipe started out from the Best Life Diet book. I had never seen the fire roasted tomatoes before. Very nice flavor. I added more vegetables, seasoning and tortillas to the soup itself. I thought it was just as good as any tortilla soup I've had in restaurants. The only thing I would do differently is to add more cilantro at the end. I really like the fresh taste of cilantro.
