This a flavorful soup I developed using a black bean stew recipe and adding to it. To make it even lower in fat, you can substitute fat-free ham for the bacon, or leave it out entirely.
This is a versatile recipe. You can vary the veggies and seasoning to suit your taste. For picky kids, just skip the veggies and add pepperoni.
From "Diet With a Difference", AAUW, San Juan Branch PR. The original recipe did not call for spinach, so that's optional. I've also made it with spinach but left out the eggplant. It's wonderful either way.
