Double Cheese Hot Crab Dip

We've never used it as a dip. Always with a fork or Scoop crackers as a quick lunch to impress friends. It's like a 7 layer dip with no beans.

Left-Over Tuna & Mac Salad

When the produce drawer is left with just midgesof leftovers veggies, new elbows and tuna give stuff you've been looking at for a week, a whole new taste. Enjoy a full 1/2 cup serving with crackers or up it to a cup with carrots for a full meal.

Gorgonzola, Apple and Gingered Walnut Salad

This makes about 3 quarts of salad, so serving sizes can vary widely. I've used 6 so that it's easier to do a main dish or a side. It's beautiful enough for guests and the flavor is the best for those who like a strong blue flavor. You can save time by not making the gingered walnuts, just using halves.

Spinach, Avocado, Walnut Salad Bowl

Wonderful salad for lunch or dinner or side. We make extgra of the vinaigrette and use it for other salads as well.

Sauteed Peppers and Onions

Simple like the Italians make. Great side dish or vegetarian main dish with a loaf of bread

Grilled Portabella Mushroom Caps

Can be done with Large and small mushrooms. If large, 1 mushroom = serving and if small 3 = serving. Also, can either grill or roast in the oven. Also makes a unique serving bowl.

Broiled Rainbow Trout

I do all of our fresh fish fillets this way. Quick, easy and healthy. Stupendously easy clean up as well. This way the actual flavor of the fish is what we get to appreciate.

This is wonderful for a long busy day and a cold night's dinner. Stick it in the oven and walk away for 4 hours. Do not peek. Do not stir. Serve with my Golden Sweet Cornbread muffins.

Golden Sweet Cornbread

I put this in muffin tins to make 12 servings otherwise it can be made in a 9 inch round pan. It puffs up beautifully and the added butter gives it a wonderful shine. Can cut down fat by not using ti.
