Somewhat of a recreation of the Lean Cuisine Fiesta Chicken. The portions are a bit large because my family is not on a diet...just me. So I have a half of a serving. That is a little over a 3 oz piece of chicken.
I use the Biggest Loser "Main Event Marinara Sauce" from the family cookbook but any lowfat sauce will work well. (I also have the sauce recipe on the site)
This is a good lunch pizza. You can add a little olive oil to the pita first, or 1 tbsp of fat free ranch...or leave it as it is. Very good lunch.
