Using couscous instead of rice makes this dish easier to fix.
When I want a spinach pizza...I make this. Very yummy, full of protein, calcium and magnesium (one of the hardest minerals to get into my diet). Use fresh raw spinach. I tried it with frozen and steamed spinach, but it was messy and did not taste as good.

This is a dish that you can prepare in about 5 minutes and let bake while you shower and get ready to go to work.
A thick soup that can be slowly simmering while you exercise or clean the house. Enjoy over rice, cornbread, or couscous when it is done. Or just eat it by itself.
A meatless main dish which has a "meaty" taste. Good for batch cooking. Great for potlucks or picnics.
