From the food network with a few modifications
I have made this a variety of ways with different fruits and it never fails to be a hit. My friends call this aphrodisiac salad - you be the judge!
Spelt is one of my favorite flours because it is high in fiber and protein while being good for those with wheat sensativities. This is what I use as a pancake base and I use only organic ingredients. I usualy add blueberries, strawberries, or ground flaxseed for variety. I also experiment with different extracts like vanilla, almond, or orange. To give it a more sweet flavor, add some stevia for even more fiber and no calories or artificial sweetner yuckiness.
