A cross between a savory custard pie and a french dip--no bread!
Most of these items are kept on hand in my house's pantry and freezer, so throwing this together takes a mere 20 min. Adjust as you like. This version is italian spiced. It's hearty and very very satisfying. Spinach is a great addition if you're looking to boost fiber and folate!

Great on baked potatoes for a super supper, also great on whole wheat pasta. Add some spinach instead for a super dip!
This Couscous mix can be served in a bowl or serve w/ lettuce cups for a middle-eastern style supper. Also great for lunches, reheats well!
Hummus with a nutrional kick--Spinach adds Folate and Iron to an already protien-packed snacking staple. Serve with celery and carrot sticks and a couple of whole grain pita chips to turn this dip into a first class snack.
