1134076, this meatloaf has offered a good solution to the dilemma in our household: my husband LOVES meatloaf, and I've always hated it. This slightly smoky/spicy moist meatloaf still has texture, which was always my meatloaf complaint, and GREAT flavor! He even said it was "outstanding with a little zip" in sandwich form.
From SkinnyTaste, adjusted with personal ingredient choices such as FF sour cream (versus reduced fat), Hellman's Light (formerly sold as Just 2 Good - 15 calories/Tablespoon), and grated parmesan (in place of Parmigiano Reggiano). Also added water chestnuts.

Kind of thrown together, this recipe uses Greek yogurt in place of sour cream. The potatoes came out kind of sticky, so feel free to add a little milk (or cream) for a smoother potato.

This spicy tomato soup (not cream-based) is an attempt to recreate a canned soup I had from Sainsbury's years ago. I planned this for 4 servings, but you could easily split this into smaller servings because 1/4 is a BIG bowl of soup.

After using my food processor to "grind" some chicken breasts I got on sale, I was very excited to be able to try my hand at some chicken meatballs! My husband said at first glance these appear dry, but definitely do NOT taste dry!
I suppose you could use frozen spinach in this recipe, but we didn't have any on hand, so I just used some fresh spinach finely chopped.
