I wanted to take an already healthy favorite and make it healthier. So, I subbed miso for salt and sweet potatoes for the white variety. I think it keeps a lot of the flavors while keeping sodium and starch low.
I just made this off the cuff as I was tired of the same old salad. It's creamy, and packed with protein!
