Pico Egg
Cook pico in a little oil til the onions are soft and almost translucent and the add egg. Be sure you have enough liquid to keep the egg moist. A very tasty breakfast which i often serve with a toasted slice of pumpernickle bread (the softer and lighter Black Forest version)
