We had a bumper crop of grape tomatoes this year so I was searching for some recipes to use them up. Found the base of this recipe on COOKS.com & tweaked it to our tastes.
The result is a light, healthy summer dinner.

A light, tastey, & low sodium way to use up some leftover chicken.
I make these & bake in the mini aluminum loaf pans to take on our camping & sailing trips.
Great healthier yet child (& husband, lol!) approved yumminess!
Nutritionals include chocolate chips & raisins.
These are moist, dense muffins that are NOT sugar or fat free...but are still on the healthy side of things.
I baked them to take on a camping trip & they were not only delicious first thing in the morning, but a nice pick-me-up during a hike~!
My 3 & 5yr olds love them too...a big + ;-)
Note to self: mini chocolate chips would be a good addition!

I copied another SP recipe, but needed the nutritionals w/o artificial sweeteners & butter. ;-)
I used to beg my Dad to make these growing up. With my healthier lifestyle I wanted to try with some whole grain. These turned out perfectly!
I think next time I will give a yolk to the dog, use a light soy milk & add in some wheatgerm to kick up the nutritional value a bit more.

I was looking for something new to try with my summer tomato abundance & this was a winner! Entered into SP for the nutritionals & thought I would share. ;-)
My husband enjoys fishing off Catalina Island here in California & frequently brings home skipjack. It is a tuna...but the fishier tasting kind...so not the best eats. HOWEVER, I have discovered that we all LOVE it for tuna sandwiches! If you have a fisherman in your family, give this a try. It is a sandwich that my fussy 4yr old daughter devours!
